In this 6 hour workshop, you will move beyond the basics of sourdough to include more advanced techniques of baking bread including seed soakers and porridge breads, vegetable purees, and understanding how to utilize baker's math to adjust leaven percentages, fermentation times, whole grains, and to create your own ideal formula. We will trouble shoot your questions and focus on using stoneground wholemeal flour before baking several loaves of prepared dough using a Rofco B40 oven. Scoring will focus on techniques to improve oven spring as well as add more decorative elements to your repertoire. You will receive recipes and leave with a loaf to bake at home, several loaves of freshly baked bread, and a deeper understanding of this infinitely inspiring process. A light lunch will be provided (please comment in the notes at check-out if you have any dietary restrictions).
